Kitchen Remodel

I am so excited. After 7 months of Jeremy's hard work our kitchen is finally remodeled!! Here are the much anticipated before and after pictures! Quite a dramatic change. I LOVE LOVE LOVE how it turned out!

Family Hike

On Saturday we decided to go on our first family hike of the season, and we took Jeremy's sister Megan along with us. It was so much fun. The kids both loved it. Boston is a true boy. He loves sticks, throwing rocks, and finding water. Here are the pictures from our adventure!







Scouts


I've realized I don't blog about Jeremy much. Don't worry, he is alive and well. Last week he took his scouts on a hike! He loves being a scout leader, and the scouts love him! In fact, I'll share a funny story. While they were on their hike, two of Jeremy's old scouts showed up at my house with a stray cat. They told me they knew Bro. Rogers would know what to do. They look up to him so much, and think he has the answers to everything... even stray cats.

20 Pictures

I was going to start this post by apologizing for posting so many pictures. Then I realized its my blog and I can post as many pictures as I want, and not feel sorry about it!! I had so much fun using a new editing program, so 20 pictures it is!!

On Friday, my Mom and I took these kiddos on our second annual train to tulips trip.
We had some time to spare before Front Runner came, so we had some fun taking pictures.
"Is that train ever going to come??"

The train came, and off we went to downtown! All 4 kids just loved the ride! We met my Dad downtown and had lunch in the new food court! Just like old times!

After lunch we went and checked out the new Deseret Book. It is really cool! They had this mock organ pipe thingy, Boston thought it was cool to be in the "choir!"

After the book store, we headed over to beautiful temple square! Oh how I love this place. Especially in April! The tulips are my favorite! Here are some of my favorite pics from Temple Square!

We wore the kids out, rode the train home, and crashed at my parents! Jeremy was on a scout campout so me and the kids had a sleepover with my parents.

My parents thought it was about time that Hadley had her first ice cream home. SHE LOVED IT!!
My Mom also thought it was time to paint Hadley's nails! I can't believe we haven't done it before. They look so stinkin' cute!!

Siblings.

He pushes, and she enjoys the ride!
This was the first time Hadley took the Pooh Bear car for a ride and she LOVED it, and knew exactly what to do. She got on and started scooting with both feet!! Amazing! Hadley has also added two words to her vocabulary... Uh-Oh and Hi. Oh how lucky I am to be their Mom.

Mexican Recipes

An awesome lady in my ward taught us how to make authentic mexican enchiladas and horchata. It is just so delicious, I had to share the recipes! I wish I would have taken pictures when I made it Sunday night... but I didn't think about it. Enjoy!

Green Authentic Enchiladas
Sauce
1-3 pieces of Serrano peppers (I use 2! 3 is WAY to spicy!)
1 Garlic clove- peeled and minced
1 tsp. vegetable oil
1 lb. fresh green tomatillos
1 small onion peeled and finely chopped
1 ½ cups of chicken broth
¼ tsp. salt

Enchiladas
2-3 large skinless boneless chicken breasts
10 corn tortillas
Vegetable Oil

Garnish
½ cup chopped red onion
2 cups grated Mexican cheese or substitute with cheddar
1 cup Mexican cream or substitute with sour cream
Shredded lettuce

1. SAUCE- Husk and wash the tomatillos. Bring a pan of water to a boil, add the tomatillos and Serrano peppers and time for 10 minutes. Drain and remove the stem ends of the peppers. Put the tomatillos, peppers, onion, garlic and the chicken broth in a food processor and process to a coarse puree.
2. In a large pan heat the vegetable oil over medium heat. Be careful not to let it get to hot… Add the green sauce and simmer 2 minutes. Stir in the salt. Simmer 15 minutes, stirring occasionally. Set aside.
3. CHICKEN- Place the chicken in a large saucepan and cover with water. Bring just to a boil, reduce the heat and cover and simmer until cooked through. Remove the chicken from the water and cool slightly. Shred the chicken and set aside.
4. TORTILLA’s- In a 9-10 inch frying pan heat the oil over medium high heat. Put 1 tortilla in at a time into the hot oil and fry about 30 seconds each side. Drain on paper towels. Cool slightly. OR you can just heat the tortillas in the microwave for fewer calories.
5. ENCHILADA’s- Spoon some of the green sauce down the center of each tortilla, fill with shredded chicken. Roll as many as you like on each plate. Spoon the warm green sauce over the enchiladas and sprinkle with the cheese, cream, onion, and lettuce.

**I find the tomatillos and Serrano peppers at my Walmart, right by all the other peppers, cucumbers ect…
These enchiladas are not supposed to be big. You are supposed to roll them fairly small. A serving is 3-4 enchiladas. The recipe for the sauce will make enough to cover 20 enchiladas. So adjust the chicken and tortilla amount to how ever many you want to make. ENJOY!! SO YUMMY!!



Horchata- Ground Rice Drink

Ingredients
1 lb. Long Grain Rice
1 cup Evaporated Milk
1 cup Sweet and Condensed Milk
Sugar as desired
Cinnamon as desired
Ice

Preparation
Place the rice in a bowl with enough hot water to cover. Let the rice sit overnight. Next day, remove the water. Place the rice, sugar, evaporated milk, condensed milk, cinnamon and sugar in a blender. Blend until rice is all ground up. Strain through cheesecloth. Add water to your desired taste. The less water, the more sweet the drink. Pour in a pitcher and add lots of Ice.

**If you don’t have cheesecloth, then make the drink as instructed, but don’t drink about the last ½ inch to an inch of your drink as it will be the rice portion.

Our Weekend= A Fire Pit, Coughs, A Sad Move, and a Baseball Game!

Our weekend started out with Jeremy working EXTREMELY hard to level enough ground in our backyard to build a fire pit! He finished at about 8:00pm, and we dragged our sick, coughing kids outside to roast marshmallows on our first ever backyard fire!
It was a really quick fire, but so much fun to be outside, gazing at the stars and city lights and enjoying a gooey mallow! Nothin' better.

Boston loved "camping" and can't wait to roast a hot dog!

Saturday was a sad day for us. Jeremy's sister Jenn moved out of our basement, and moved in with some girls from her ward. Jeremy and I didn't realize how sad it would make us. We have really enjoyed the last 7 months with our "Aunt Jenn." We are going to miss her terribly, but are so glad she only lives a few minutes away!

Saturday night we went to our nephew Taylor's baseball game! Taylor is 10 years old and has never played baseball. It was his 3rd game of the season and he did AWESOME!! My favorite part was watching him slide into home!!

On Sunday Jeremy stayed home with the sick kids and I went to Primary. The worst quote from Sunday was a little 4 year old running out of the bathroom totally frightened and saying "I flushed, and water sprayed everywhere!" My favorite quote was a little 3 year old girl's response to my question what does reverence sound like? "It sounds like a puppy sleeping." Oh how I love my calling in Primary!

On Sunday night my parents came out and I cooked them green sauce Enchiladas and Horchata. We have a lady in our ward from Mexico and she taught us how to make them! If anyone wants the recipes just let me know and I will post them. It is always fun to have my parents down to our place! We love having visitors down in our neck of the woods.

I'm Still In Shock!! I Own A Piano!!

I can't even begin to tell you how excited I am! On Thursday night this beauty arrived at our house but only after a few dents in the walls, and lots of sweat!! I sent Jeremy an add on KSL for this piano, and the next thing I knew he bought it! I am so excited to practice and become a much better piano player. Me and the kids have had so much fun with it already!

It is a Shaeffer brand, and was built it 1878. It is in really good shape though!! I love the old pianos. I love their sound and their look.. and their price!!

It was a Happy Happy Busy Easter!

It was a Fantasic General Conference, Easter Weekend!!

It all began with this Loot! Oh how I love Easter treats!

The Kids were so cute with their baskets, and loved making music with their eggs!

After our own Easter at home we went to my parents house for my nephew Peyton's birthday party! It was super fun, and the kids all painted their own airplanes. As you can tell, Jeremy had a little to much fun helping Boston.

My brother and his family had to leave, which left the rest of us to do an Egg Hunt!

Grandma and Grandpa had lots of fun surprises for the kids...

Including these bubble guns, which we all had fun playing with!

During Priesthood we Dyed Easter Eggs. I love that part of Easter!

It was a fantastic Easter spent with Family, and listening to General Conference!!
